Seattle will argue about the rain before it argues about brisket, which is probably wise, given how little practice we get in the latter. You will find barbecue here that ranges from the polished, steakhouse-grade service at The Butcher’s Table to a brisket sandwich at HoneyHole that you eat with plastic utensils while standing near a vinyl bin.

I have eaten smoked meat at a biker bar near the airport and at a Korean BBQ spot where the banchan is the real flex. The search requires patience and a tolerance for sawdust.

Best BBQ in Seattle
Smoked wings, crispy finish
Meaty ribs, fall-apart tender
Full bar, fast service

Wood Shop BBQ is the place I keep coming back to when I want barbecue that doesn't mess around. The brisket here is the best in Seattle—smoked low and slow, with a deep, peppery bark that gives way to moist, pink slices. What really sets them apart, though, is the wings: they come out with a crispy, almost crackly finish that holds up against the tangy house sauce. The ribs are fall-apart tender, the kind where the meat slides off the bone with a gentle tug. Service is fast, even when the line is out the door, and the full bar means you can get a proper drink while you wait. It’s a straightforward, no-nonsense operation that delivers every single time.

Smoked brisket cooked correctly
Friendly, knowledgeable counter service
Quick lunch in downtown
Solid three-meat combination plates

For a quick lunch downtown, Hole In the Wall BBQ is my go-to. The brisket here is cooked correctly—smoked until it’s tender but not mushy, with a nice smoke ring and a salty, peppery crust. The counter staff are genuinely friendly and know their menu, happy to guide you through the options. I usually get the three-meat combination, which is a solid deal and gives you a good cross-section of their work; the sausage has a nice snap and the pulled pork is juicy. It’s not fancy, but it’s efficient and satisfying. If you’re in the area and need a reliable barbecue fix without a long sit-down, this is the spot.

Tender, juicy, well-balanced brisket
Generously portioned sandwich construction
Stellar, efficient, knowledgeable service
Distinctive Blue Chestnut Burger pairing
Memorable peach cobbler dessert

Jack’s BBQ & Steakhouse is a step up from the typical barbecue joint, and it shows. The brisket is tender, well-marbled, and has a nice balance of smoky and beefy flavors that doesn’t get lost in the sauce. The sandwich construction is a highlight—generous portions of brisket piled on a sturdy bun that doesn’t fall apart, with pickles and onions adding a bright contrast. Service is stellar; the staff are efficient and knowledgeable, and they check in at the right moments without hovering. I also tried the Blue Chestnut burger once, and it’s a distinctive option with a nutty cheese that pairs surprisingly well with the grilled onions. End with the peach cobbler if it’s on the menu—it’s memorable, with a buttery crust and tart fruit. This place is a solid choice for a more polished barbecue dinner.

Brisket melts like candy
Spicy sauce hits hard
Pickled onions steal show
Two trucks now rolling
Downtown BBQ worth trip

Wood Shop BBQ’s food truck operation is just as good as their brick-and-mortar spot, and maybe even more convenient. The brisket melts like candy—it’s so tender you barely need a knife, and the smoky sweetness from the rub comes through without being cloying. The spicy sauce on the side has a real kick; it’s got that vinegary, peppery punch that wakes up your taste buds. The pickled onions are a sleeper hit—they add a sharp, tangy crunch that cuts through the richness. They’ve got two trucks running around town now, so your chances of catching one are decent. For a downtown lunch, it’s a worthwhile trip, and the quality is consistent no matter which truck you find.

Amazing chili, great biker-bar atmosphere, friendly service, hearty portions, chili verde or regular over jalapeno mac-n-cheese or grits, brisket and beans, fresh-squeezed limeade, huge beer and liquor selection, worth a return visit.
Best chili I've had, traditional Texas red with toppings was delicious, several variations to try, very friendly staff, relaxed atmosphere, convenient stop before the airport.

Slim’s Last Chance is a quirky spot that I almost overlooked, but I’m glad I didn’t. The chili here is the star—I’ve had the regular and the chili verde, and both are excellent, hearty and thick with a good depth of spice. They serve it over jalapeño mac and cheese or grits, and either way it’s a filling, satisfying bowl. The brisket and beans are also worth a try, with a smoky flavor that holds up. The atmosphere is biker-bar casual, with a worn-in feel that’s more welcoming than intimidating, and the staff are friendly. The fresh-squeezed limeade is a nice, tart counter to the heavy food. If you’re heading to the airport, it’s a convenient stop, and you’ll leave full and content. I’ve been back multiple times just for that chili.

Expertly cooked meats every time
Fluffy soufflé pairs perfectly
Attentive, accommodating table service
Premium banchan sets it apart
Top choice for group dining

Meet Korean BBQ is a different kind of barbecue, and it’s a welcome change of pace. The meats are expertly cooked—you can tell they know exactly how long to sear the beef and pork so it’s juicy and caramelized on the edges. The soufflé, which I think might be their take on a savory egg custard, pairs perfectly with the grilled meats, adding a light, airy texture that balances the rich flavors. Table service is attentive and accommodating; they’re happy to explain the banchan and refill the sides without you asking. The banchan itself is premium—each small dish is fresh and well-seasoned, from the kimchi to the seasoned bean sprouts. If you’re with a group, this is a top choice; the shared plates and interactive cooking make it a fun, communal meal.

Expertly smoked, tender brisket
Attentive, warm service
Strong first-visit impression
Family-friendly, generous portions

Meat Moot Seattle is a new find for me, and it left a strong first impression. The brisket is expertly smoked—tender with a good smoke ring and a crust that’s not too hard, just the right amount of texture. The service is attentive and warm, making you feel like a regular even on your first visit. It’s a family-friendly place, with a relaxed vibe where kids are welcome and the portions are generous enough to share or take home. I appreciated that they didn’t rush you through the meal. The sides are solid, too, but the brisket is the main event here. If you’re looking for a comfortable, welcoming barbecue spot with quality meat, this is a strong contender.

Highlights
Brisket worth the price
Skip the overpriced fries
Self-serve, clean, cool space
Waverider sandwich delivers flavor
Share fries with companions

HoneyHole Sandwiches might not look like a barbecue place at first, but their brisket sandwich is a real deal. The brisket is worth the price—it’s smoked just right, tender and juicy, and they pile it on a soft roll that soaks up the juices without getting soggy. I’d skip the overpriced fries, though; they’re fine, but not the point. The space is self-serve, clean, and has a cool, casual vibe with vinyl on the walls. I tried the Waverider sandwich on a friend’s recommendation, and it delivers—it’s got a nice combo of flavors and textures that keeps you going back for another bite. If you’re with friends, sharing the fries is a better call than ordering your own. It’s a solid, no-frills lunch option.

Don & Joe’s Meats is more of a butcher shop, but they’ve got a secret worth knowing: the jerky. The staff are friendly and always willing to let you sample the different varieties—I’ve tried the peppered and the teriyaki, and both are excellent, with a good chew and not too much salt. It’s the perfect snack for exploring the city, easy to pack and satisfying when you’re walking around. I’ve also stocked up for a road trip, and it held up well, staying fresh and flavorful. The shop itself is small, but it’s clean and organized. If you’re a meat lover, this is a great stop to pick up something for later. I’ve made several visits just for the jerky, and I’ll keep coming back.

McCoy’s Firehouse Bar & Grill is a solid choice for a hearty meal, especially if you’re catching a show at the venues nearby—it gets popular before big concerts, and for good reason. The handmade burgers are the highlight, with fresh patties that are juicy and cooked properly to your liking. I tried the bacon peanut butter burger, and it’s a standout; the peanut butter adds a savory richness that works with the smoky bacon and sweet bun. The menu is broad American fare, so there’s something for everyone, from salads to sandwiches. The Cobb salad is a solid option if you want something lighter—it’s got fresh ingredients and a good dressing. Service is efficient even when it’s crowded, and the bar has a decent selection. It’s not fancy, but it’s reliable and satisfying.

The service is attentive without hovering—they correct your drink order before you even notice a problem, which is a nice touch. The steaks are perfectly prepared, whether you ask for a rare ribeye or a medium-rare filet; they come out with a proper sear and exactly the internal temperature you requested. The old fashioneds here are excellent, made with a good bourbon and a hint of orange oil. It’s a bit of a splurge, and it’s worth every penny for a special occasion or when you just want to treat yourself right.

Old Stove Brewing Co at Pike Place is a great spot to grab a beer and some solid bar food, especially before the crowds hit. The views from the upstairs patio are fantastic—you get a sweeping look at the waterfront and the ferries coming in, which makes the wait for a table feel short. The service is prompt if you get there before the rush; after that, it gets busy, but that’s part of the charm. The ciders are crisp and not too sweet, and their sauces are house-made with a good kick. Don’t skip the fish and chips—the batter is light, crispy, and well-seasoned, with flaky fish inside. It’s a reliable choice for a casual meal with a view.
